Chef Franco Sampogna has built one of New York City’s most distinctive culinary identities around the expressive power of sauces, rooted in classical French technique and shaped by South American and Asian influences.

At FREVO, a sauce is never just a sauce. Emulsions, jus, foams, and condiments each play a specific role. Carrying depth, acidity, sweetness, or brightness, unifying every component on the plate and, in some cases, becoming the visual signature of the dish itself.

The menu price is $255 per person.

Please note that FREVO cannot accommodate vegan or lactose-free diets. All food restrictions must be communicated at least 48 hours before the reservation. Restrictions announced upon arrival cannot be accommodated.

Wine

The wine program at FREVO is led by Beverage Director Quentin Vauléon, Best Young Sommelier in France 2017 and third-place finalist at the Best Sommelier of France competition in 2024.

FREVO’s program is built around an organic farming philosophy, with pairings designed to complement Chef Franco Sampogna’s sauce-centered cuisine. The wine and non-alcoholic pairings rotate every four months alongside the menu and the gallery exhibition.

Wine Pairing is $135 per person.

Premium Wine Pairing is $290 per person.

Non-Alcoholic Pairing is $85 per person.
